
Sıkıcık Çorbası
Sicik Soup is a hearty soup unique to Kütahya, made by kneading fine bulgur with tarhana and flour and squeezing it into small meatballs. It takes its name from the fact that the meatballs are shaped by squeezing them in the palm of your hand. Cooked with tomato paste and water, and served with garlic yoghurt, it creates a balance of both sour and hot taste.
Ingredients
- fine bulgur
- tarhana
- Flour
- dried mint
- black pepper
- onion
- tomato paste
- garlic
- yoghurt
- Butter or oil
Recipe

Soak the fine bulgur with hot water and let it swell.

Add tarhana, flour, mint and black pepper and knead a tight mixture.

Make small balls from the mixture and place them on a floured tray.

Fry the onion in oil, add tomato paste, cover with water and boil.

Put the bulgur balls into boiling water and cook; Serve with garlic yoghurt.
