Ispit Dolmasi shows how wild or local greens enter the stuffed-leaf tradition in Karabuk and the Western Black Sea region. Ispit leaves are wrapped with a rice and onion filling; their slightly herbal taste separates the dish from classic vine-leaf dolma. When made with seasonal ispit, it becomes a memorable example of village-table cooking.

Recipe

    Clean the ispit leaves, wash and briefly soften them in boiling water.

    Prepare the filling with rice, chopped onion, tomato paste, mint, salt and a little oil.

    Place a little filling on each leaf and roll tightly.
