Anchovy Pastry is one of the prominent local flavors in Giresun cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Ingredients

  • peanut

Recipe

    Anchovies are soaked in water for 1 day, drained through a strainer and cleaned by removing the bones.

    Melt olive oil and butter in a pot, add finely chopped onions and fry a little, add peanuts and continue roasting over low heat until they change color.

    When the color starts to change, add the raisins (soaked in hot water to prevent the rice from darkening) and rice and continue mixing.

    Squeeze half a lemon on it, add black pepper, a little salt and red pepper and mix again.

    Pour boiling water over the rice, add a little more salt, add a teaspoon of sugar, stir, cover the pot and let it cook.
