
Çibörek
Çibörek is a pastry identified with Eskişehir. It is made in many places in Turkey, but it is not easy to find the taste of çibörek in Eskişehir elsewhere. Çibörek, which is a product of the Crimean Tatar culture that first settled in Eskişehir; It is a traditional pastry made by putting a mixture of minced meat, onion and spices on a rolled out dough and frying it in oil. It is usually in the shape of a half moon.

Mix flour, water and salt in a bowl and knead until it reaches the consistency of earlobe.

Onions are grated very finely, minced meat, salt, black pepper and water are added, mixed well and a mortar is prepared.

Take walnut-sized pieces from the prepared dough and roll them into approximately 15-20 cm pieces.
