
Kadayıf Dolması
Kadayıf Dolması is one of the prominent local flavors in Erzurum cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Erzurum Kadayıf Stuffing is made from wire kadayıf, which requires skill and mastery.

For Erzurum Kadayıf Stuffing, 20-25 g of strands of kadayıf are separated from the whole without being torn off and laid on a clean surface.

Preferably 5-10 g of walnuts are added into it.

Then, the stuffed kadayıf wrapped in a pool of eggs, whose yolk and white are thoroughly beaten and turned into a slurry, are rotated around themselves twice.
