
Ayran Aşı
Ayran Aşı is one of the prominent local flavors in Erzurum cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- (For approximately 10-15 people)
- yoghurt
- ashure wheat
- special purpose wheat flour
- fresh or pickled shotgun (Coriandrum Sativum)
- butter
- lean ground meat
- black pepper 4 liters of water
- medium sized onion
- salt
Recipe

Boil wheat for Ashura with 2 liters of water for approximately 30 minutes.

Mix the yoghurt with flour and put it in another pot. Add 2 liters of warm water to the boiled ashura wheat and stir until it boils.

Mix lean minced meat, salt and black pepper in a bowl, roll them in your palms to prepare meatballs with a diameter of 1 cm and place them on another plate.

In a different pan, chop the onions into small cubes, fry them with butter for about 5 minutes until they turn pink, and add them to the cooking soup pot.

Then the fried meatballs are added to the soup pot.
