Madimak is one of the widely known and collected herbs of Anatolia. It is collected in the spring and dried for the winter. Madimak, whose name is the subject of folk songs, is one of the oldest known dishes of Central Anatolia. Collecting the knotweed, which begins to emerge from the meadows and grasses in the spring months, is a difficult task.
