
Soğan Dolması
Stuffed Onion is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients

Sumac juice, which is kept in hot water for an hour, is filtered and separated.

Peeled onions are cut in half vertically.

It is boiled until the cut leaves the ground and separated leaf by leaf without tearing the layers.

A stuffing is prepared by mixing finely chopped onion, tomato, green pepper and parsley with minced garlic, rice, ground meat, tomato paste, optional spices, olive oil, salt and a tea glass of sumac juice to prepare the stuffing.
