Selmi is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

The flour is roasted in oil until it turns pink.

Add thinly sliced cheese on top and stir fry with a wooden spoon until the cheese melts and becomes stringy.
