Parpar Salad is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

- 2 bunches of parpar (purslane) 1 tablespoon of salt
- yoghurt
- strained yoghurt
- pomegranate

The cleaned and washed parpar (purslane) is chopped into small pieces.

Yogurt and strained yoghurt are diluted with water and whisked.

Chopped parpar, cleaned pomegranate and salt are added, mixed and served.
