Parpar Roast is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- 2 bunches of parpar (purslane)
- onion 1 teaspoon chili pepper and black pepper 1 teaspoon salt
- For Egg Sauce:
- yoghurt 2 cloves of garlic 2 tablespoons of butter 1 teaspoon of chili pepper

Chop the onion and fry it in oil until it changes color.

The parpar (purslane), which is sorted and washed, is boiled and squeezed in the palm of the hand to remove water.

Add scrambled eggs, chili pepper, black pepper and salt to the roasted onion and mix.

When the eggs start to cook, boiled and drained parpar is added and roasted for about 3 minutes.

It is placed on presentation plates and served as is, or with garlic yoghurt and pepper butter sauce poured over it.
