Parpar Aşı is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- 2 bunches of parpar (purslane)
- onion 1 tablespoon pepper paste 1 tablespoon tomato paste
- rice or bulgur 3 tablespoons butter 1 teaspoon salt

Chop the onion finely and fry it in oil with tomato paste.

Parpar (purslane) is washed and chopped, added to the onion and roasted two or three times together.

Then, add rice or bulgur, three cups of hot water and salt, cook for half an hour and serve hot on presentation plates.
