
Mukeşerli Pilav
Mukeşerli Pilaf is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Chickpea shells, which are soaked the night before and boiled in the morning, are cleaned and divided into two pieces to make mukesher.

Washed and drained rice is roasted in oil for 2-3 minutes.

Add Mukeşer, 4 cups of hot water and salt and cook by mixing.

When it starts to boil, reduce the heat and cook the rice over low heat until it absorbs its water and thickens.

Take the rice from the stove, place a paper towel over it, close the pot lid and let it steep for 10-15 minutes.
