Kişmişli Pilaf is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- rice 3 tablespoons butter
- kishmis (raisins)
- vermicelli 1 tablespoon salt
- hot water

The grapes are soaked in water for about an hour and the water is drained.

The vermicelli is roasted in oil, rice and then grapes are added and 4-5 slices are roasted together.

Add four glasses of hot water and salt and cook.

When it starts to boil, reduce the heat and cook it on low heat until it absorbs its water and reaches the consistency of rice, then remove it from the heat.

Wrap the rice pot with a cloth and let it brew for 15-20 minutes.
