Keşkek is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Ingredients

  • cubed or boned meat

Recipe

    Boil the meat and pour its broth into a separate bowl.

    Chickpeas that have been soaked in water overnight are drained, beaten, broth, hot water, butter and salt are added and cooked.

    When it starts to boil, reduce the heat and cook it for about 30-35 minutes over low heat to the consistency of rice.

    At the last stage of cooking, boiled meat is added and mixed.

    After it is removed from the heat and infused for about 15 minutes, it is served on presentation plates with fried butter poured over it.
