Kelem Salad is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Recipe

    Wash and rinse the cabbage with plenty of water and chop it finely.

    Chopped cabbage is rubbed with salt, finely chopped parsley and pomegranate are added and mixed.

    Prepare the sauce by mixing oil, sumac, pomegranate syrup or lemon juice in a separate bowl.

    The prepared sauce is poured on presentation plates and served.
