
Katıklı Dolma
Katıklı Dolma is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- winter squash
- medium fat lamb
- bulgur for meatballs
- onion 1 egg 3-
- green pepper 1 teaspoon black pepper
- red pepper flakes
- cumin and salt Half a tea glass of dried basil For the Sauce:
- yoghurt 3 cloves of garlic 3 tablespoons of butter 1 tablespoon of chili pepper

It is a local dish that can be made in any season, with fresh zucchini in summer and winter squash in winter.

The peeled winter squash is cut in half, cut into a 2-3 mm thick layer of strips/wraps with a pocket knife, salted and left to rest for a day until it reaches the consistency to be made into stuffed wraps.

After grinding the meat, onion and green pepper together twice in the machine, bulgur, egg, basil, cumin, black pepper, chili pepper and salt are mixed and kneaded.

While kneading, a bowl of water is kept and occasionally a handful of water is taken and poured into the meatball mixture.

As the dough hardens, add a little water and knead it until it reaches a dough consistency that will not stick to the hand.
