Kartollu Pilaf is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- medium size kartol (potato)
- bulgur for rice 3 tablespoons butter 1 teaspoon salt
- hot water For Topping: 1 tablespoon butter

Chopped small potatoes are fried in oil for 2-3 minutes.

After adding bulgur and roasting it together for 3-4 turns, 5 glasses of hot water and salt are added and cooked.

When it starts to boil, reduce the heat and cook it for about 15 minutes until it absorbs the water and reaches the consistency of rice.

It is served on presentation plates with fried butter poured over it.
