Black Mulberry Jam is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

The mulberry is sorted, a layer of mulberry and a layer of sugar are poured into the pot and left for a day.

The next day it is boiled for 15 minutes.

When it starts boiling, lemon juice is added and boiled for another 2-3 minutes and then removed from the heat.

The mouth of the pot is covered with cheesecloth, left in the sun for two days to ripen, then placed in jars and consumed.
