Itburnu (rosehip) Marmalade is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Ingredients

  • rosehip (rosehip)
  • sugar
  • water Half a lemon 1 teaspoon butter

Recipe

    The rosehip flower and stem parts are removed and washed.

    After cooking it in water until it reaches a crushing consistency, it is squeezed in a strainer.

    The resulting water is passed through a fine sieve two or three times to separate it from the shell and seeds.

    Sugar is added and boiled.

    When it starts to boil, lemon juice and butter are added, boiled for about 5 more minutes until it thickens, then removed from the heat, cooled and consumed.
