İncik Kebab is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Ingredients

  • small potatoes
  • shallot

Recipe

    Seal the lamb shank by turning it in hot oil for 2-3 minutes.

    Add a glass of hot water and boil it in a pressure cooker, then cook it over low heat for 45 minutes.

    Peeled potatoes and onions are boiled in separate containers and then fried in hot oil.

    Boiled shanks, potatoes and onions are placed on a baking tray.

    Add a glass of broth, thyme, black pepper, chili pepper and salt and bake in the oven for 20-25 minutes.
