Bean Salad is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Recipe

    Dried beans soaked overnight are boiled for 25-30 minutes in the morning and the water is drained.

    Chop the onion into long crescents (yayzlik).

    Chop the spring onion, mint, parsley and pepper finely, and chop the tomato into cubes and put them in a deep bowl.

    Add beans, salt, black pepper and chili pepper and mix.

    It is served on presentation plates, drizzled with olive oil, lemon juice or pomegranate syrup, if desired.
