Et Taplama is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- For the Stuffing:
- medium fat ground meat
- concept oil
- lean ground meat
- bulgur for meatballs
- semolina
- egg 1 tablespoon flour

Preparation of the Stuffing: The oil is extracted in the machine, the onion is grated and its juice is squeezed to remove its bitterness.

Stuffing mixture is prepared by mixing fatty minced meat, chili pepper, sumac, black pepper and salt.

Preparation of Outer Stuff: Add lean minced meat, bulgur, semolina, egg, salt and a small amount of water to soak and knead.

While kneading, a bowl of water is kept and occasionally a handful of water is taken and poured into the meatball mixture.

As the dough hardens, add a little water and knead it until it reaches a dough consistency that will not stick to the hand.
