
Çorti Taplaması
Çorti Taplama is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- chorti (sauerkraut)
- bulgur for meatballs
- flour
- semolina
Recipe

Put the corti (sauerkraut) into the pot, add 2 glasses of water and boil for 10-15 minutes.

The sourness level can be adjusted by adding water if desired.

In a separate bowl, soak the bulgur with some of the cabbage juice and let it rest for about half an hour until it absorbs its water.

Flour, semolina and eggs are added to bulgur and kneaded by hand to a dough consistency that can be shaped.

While kneading, a bowl of water is kept and occasionally a handful of water is taken and poured into the meatball mixture.
