Çorti Aşı is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

It is one of the local dishes usually made during the winter months.

Chickpeas are soaked the day before and drained.

Add chickpeas, ground meat, pomegranate peel, sauerkraut (chortu), olive oil and two liters of hot water to the meat with bones in the pressure cooker and cook for 30-35 minutes.

The pomegranate peels are removed from the meal and placed on presentation plates, and served hot.
