Fried Liver is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Ingredients

  • lamb liver
  • tail fat Half a tea glass of oil
  • green pepper
  • onion Half a teaspoon of chili pepper
  • black pepper and cumin 1 teaspoon of salt For Topping: Half a bunch of parsley

Recipe

    The liver is rinsed, cut into cubes, left to rest in hot water for a minute or two to release its bloody juice, and then drained.

    The livers are first sealed in tail fat in a pot and then left to cook in their own fat and water.

    Finely chopped onion and green pepper are fried in oil and added.

    When the onion and pepper become identical and soften, add the spices, cook for another 10 minutes and remove from the stove.

    It is served on presentation plates with chopped parsley added on top.
