
Çiğ Köfte
Raw Meatballs is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.
Ingredients
- lean ground meat
- fine bulgur
- tomato 2 tablespoons yoghurt
- olive oil 4-
- green onion
- lemon 2 teaspoons isot 2 teaspoons black pepper
- cumin 2 teaspoons chili pepper and salt
Recipe

Minced meat is made by pounding lean raw meatballs or grinding them twice with a machine.

The meat is mixed with a teaspoon each of spices, a teaspoon of isot, a tablespoon each of pepper paste and tomato paste, then two crushed cloves of garlic and half of the grated and drained onion, and kneaded and rested for 15 minutes.

Add bulgur, grated tomato, onion, spices, two crushed cloves of garlic, a spoon of tomato paste and sliced lemon with peel and knead for another 20 minutes, then remove the lemon peel.

Add chopped green onion and parsley and knead until it reaches a thick consistency.

At the last stage, yoghurt and olive oil are added, kneaded for another 3 minutes, pressed and served with ayran, phyllo bread and greens on presentation plates.
