Walnut Jam is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Ingredients

  • immature walnuts the size of a plum
  • granulated sugar 1 teaspoon lemon salt
  • lime 1 teaspoon baking soda 6-

Recipe

    The green shiny parts of unripe plum-sized walnuts are scraped off and placed in water.

    Walnuts, whose water is renewed at the same time for eight days, are washed on the eighth day and left to rest in lime water for four hours.

    It is pierced with a fork, boiled in soda water, and then rinsed with cold water.

    To give scent and aroma, cloves and cinnamon are placed in sugar water in cheesecloth and the walnuts are boiled in this water for the last time.

    When the walnuts are browned and have the consistency of jam, lemon salt is added and boiled for three minutes, then removed from the stove, removed the cheesecloth and let it rest.
