Büryan Pilaf is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

Ingredients

  • rice
  • medium onion
  • large size tomatoes 3 tablespoons butter 1 teaspoon cumin
  • coriander and black pepper 1 teaspoon salt
  • broth 1 tablespoon butter for topping
  • burian kebab

Recipe

    Wash the rice with plenty of water and keep it in warm water for 20 minutes.

    Fry the chopped onion in oil in another pot until it turns slightly pink.

    Add rice and fry 2-3 pieces together.

    Then, grated tomatoes, cumin, coriander, black pepper and salt are added and roasted for 3-4 turns, then 3 cups of hot broth is added and cooked.

    When it starts to boil, reduce the heat and cook for about 10 more minutes until the water evaporates.
