Borani is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

The peeled and chopped squash is cooked in two glasses of water until it becomes mushy.

Add gilgıl (white millet) and shijer to the pumpkin and cook, stirring, for about 10 minutes.
