Bitlis Meatballs are one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

- fatty ground meat
- concept oil (şereh) 1 tablespoon sumac
- onion 1 teaspoon black pepper 1 teaspoon red pepper flakes 1 teaspoon salt

Stuffing Preparation: Grate the onion, squeeze out its juice, and extract the conceptual oil in the machine.

The stuffing prepared by mixing fatty minced meat, chili peppers, sumac and black pepper is made into walnut-sized lumps and frozen in the refrigerator.

Optionally, add 1 sour pomegranate or lemon juice to the stuffing.

Preparation of Stuffing: Lean and skinless thigh meat is ground twice in the machine to make minced meat.

One kg of minced meat and one kg of bulgur, semolina, eggs, salt and a small amount of water for soaking are added, mixed and kneaded by hand to a consistency that can be shaped.
