Aguz is one of the prominent local flavors in Bitlis cuisine. It reflects the character of the city cuisine with the ingredients and cooking method used in the local table culture.

After birth, some of the colostrum taken from dairy animals is fed to the baby and some is saved.

On the fourth day, the milk expressed is added to the collected colostrum and boiled.

When it starts to boil, salt is added and cooked until it reaches the consistency of pudding and becomes mushy.

After the dessert is cooled and placed on presentation plates, black cumin seeds and granulated sugar are poured on it, if desired, and served.
