Biography
Swedish-born Turkish chef Mehmet Gürs is known as the pioneer of the 'New Anatolian Cuisine' movement at his Mikla restaurant overlooking the Galata Tower. Gürs, who blends Aegean herbs, Anatolian grains and traditional fermentation techniques with a modern fine dining approach, is the only Turkish chef included in the list of the world's 50 best restaurants.
