Zonguldak hardtack, the century-old companion of Zonguldak miners, is a twice-baked hard bread. This durable bread, taken down to the mines, was eaten softened in soup, with cheese, or simply with water. Today it maintains its place among the registered flavors of the region.

Ingredients

  • 4 cups flour
  • 1 pack of dry yeast
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1.5 cups of warm water
  • 2 tablespoons of olive oil

Recipe

    Activate the yeast with sugar and warm water, wait 10 minutes.

    Mix the flour and salt, add the yeast mixture and olive oil and knead.

    Leave the dough to ferment for 1 hour.

    Shape into small breads and bake in the oven at 200°C for 20 minutes.

    After it has cooled, slice it thinly and dry it completely by baking it in the oven at 150°C for another 40-50 minutes.
