Ispit Dolmasi shows how wild or local greens enter the stuffed-leaf tradition in Karabuk and the Western Black Sea region. Ispit leaves are wrapped with a rice and onion filling; their slightly herbal taste separates the dish from classic vine-leaf dolma.
